Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes to keep them from burning on the grill.

  2. 2

    2. In a microwave-safe bowl or small saucepan, combine the guava paste, lime juice, 2 tablespoons (30 ml) olive oil, chipotle peppers in adobo, garlic, cumin, oregano, 1 teaspoon salt, and black pepper. Warm gently for 20 to 30 seconds in the microwave or over low heat until the guava paste softens, then stir into a thick, smooth marinade.

  3. 3

    3. Place the pork loin in a large bowl and add two-thirds of the guava chipotle lime marinade. Toss well to coat all the cubes. Reserve the remaining third for basting during cooking. Marinate the pork for 15 minutes in a cool place or refrigerated.

  4. 4

    4. In another bowl, mix the corn kernels, red onion, the remaining 1 tablespoon (15 ml) olive oil, honey, lime zest, 1/4 teaspoon salt, and half of the chopped cilantro.

  5. 5

    5. Thread the marinated pork onto the skewers, alternating with pieces of red onion from the bowl. If any onion remains, keep it with the corn to cook in a grill tray or grill-safe pan.

  6. 6

    6. Preheat the grill to medium-high heat, about 425 °F / 220 °C. Lightly oil the grates if needed.

  7. 7

    7. Place the skewers on the grill and cook for 10 to 12 minutes, turning every 3 to 4 minutes and basting with the reserved marinade, until the pork is fully cooked and reaches an internal temperature of 145 °F / 63 °C.

  8. 8

    8. At the same time, cook the corn and onion mixture in a perforated grill tray or grill-safe skillet for 6 to 8 minutes over 425 °F / 220 °C, stirring once or twice, until the corn is charred in spots and the onion is tender.

  9. 9

    9. Remove the skewers and corn from the grill. Let the pork rest for 3 minutes. Toss the remaining fresh cilantro with the hot corn.

  10. 10

    10. Serve the pork skewers over a bed of charred corn and onion and, if desired, finish with a few extra drops of lime juice.

Chef tips

For better browning, do not pack the pork cubes too tightly on the skewers. If you want more heat, add 1 extra teaspoon of chipotle adobo to the final basting sauce.

Substitutions

You can replace guava paste with thick apricot preserves or quince paste, reducing the honey slightly. Cilantro can be swapped for fresh parsley if you prefer a milder flavor.
