Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes so they do not burn on the grill.

  2. 2

    2. In a large bowl, mix 30 ml (2 tbsp) olive oil, lemon juice, half of the chopped garlic, 1 teaspoon ground cumin, smoked paprika, dried oregano, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.

  3. 3

    3. Add the turkey cubes to the bowl and toss well to coat. Let marinate for 15 minutes under refrigeration.

  4. 4

    4. Meanwhile, place the delicata squash and red onion in another bowl. Add the remaining 15 ml (1 tbsp) olive oil, the rest of the garlic, the remaining 1 teaspoon cumin, the remaining 1/4 teaspoon salt, and the remaining pepper. Toss well to coat.

  5. 5

    5. Preheat the grill to medium-high heat, about 425°F to 450°F (220°C to 230°C). Clean and lightly oil the grates.

  6. 6

    6. In a small saucepan or heat-safe vessel set over indirect grill heat, combine the pomegranate molasses, honey, water, and chopped mint. Cook over low heat or indirect heat for 2 to 3 minutes, stirring, until the glaze looks glossy and slightly loosened. Remove from the heat.

  7. 7

    7. Build the skewers by alternating turkey, delicata squash, and red onion until all ingredients are used.

  8. 8

    8. Place the skewers on the hot grill. Cook for 14 to 18 minutes, turning every 3 to 4 minutes, until the turkey is fully cooked and reaches an internal temperature of 165°F (74°C), and the squash is tender with charred edges.

  9. 9

    9. During the last 3 minutes of cooking, brush the skewers all over with the pomegranate, cumin, and mint glaze so it lightly caramelizes without burning.

  10. 10

    10. Remove the skewers from the grill and let them rest for 3 minutes. Finish with a little extra chopped fresh mint and serve hot.

Chef tips

Cut the squash into pieces similar in thickness to the turkey for even cooking. If the pomegranate molasses is very thick, add a few extra drops of water before brushing.

Substitutions

You can substitute the turkey breast with boneless turkey thigh or chicken. Delicata squash can be replaced with small butternut squash cubes, blanched for 2 minutes first. Mint can be swapped for fresh parsley for a milder profile.
