Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 30 minutes. Preheat the grill to medium-high heat, about 425 °F / 220 °C.

  2. 2

    2. In a large bowl, mix the ricotta cheese, 1 tablespoon olive oil, lemon juice, lemon zest, chopped basil, garlic, honey, salt, black pepper, and red pepper flakes until you have a smooth, creamy marinade.

  3. 3

    3. Add the turkey cubes to the bowl and toss well to coat them in the marinade. Let stand for 15 minutes in a cool spot while you prepare the vegetables and fruit.

  4. 4

    4. In another bowl, toss the asparagus and strawberries with the remaining 1 tablespoon olive oil and an extra pinch of salt to help them brown evenly on the grill.

  5. 5

    5. Thread the skewers, alternating turkey, asparagus, and strawberries until you have 8 skewers. Spoon any remaining marinade over the turkey pieces.

  6. 6

    6. Clean and lightly oil the grill grates. Place the skewers on the hot grill and cook for 10 to 12 minutes at 425 °F / 220 °C, turning every 2 to 3 minutes, until the turkey is fully cooked, nicely marked, and reaches an internal temperature of 165 °F / 74 °C.

  7. 7

    7. Remove the skewers from the grill and let them rest for 3 minutes. Finish with a little extra fresh basil if desired and serve immediately.

Chef tips

To keep the strawberries from falling apart, use firm, ripe berries that are not overly soft. Cut the turkey into evenly sized cubes for even cooking. If the ricotta is very thick, loosen it with 1 extra teaspoon of lemon juice.

Substitutions

You can substitute the turkey breast with chicken breast in the same amount. Ricotta can be replaced with well-whisked requeson or blended cottage cheese for a similar texture. If you do not have basil, use a mix of parsley and a little fresh mint.
