Instructions
- 1
1. If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.
- 2
2. In a large bowl, whisk together the coconut milk, lime juice, lime zest, fresh ginger, garlic, honey, soy sauce, olive oil, ground cumin, black pepper, salt, and red pepper flakes if using.
- 3
3. Add the turkey breast cubes to the marinade and toss well to coat completely. Cover and marinate in the refrigerator for 20 minutes.
- 4
4. Meanwhile, cut the fresh pineapple, red bell pepper, green bell pepper, and red onion into similarly sized pieces so they cook evenly.
- 5
5. Preheat a gas or charcoal grill to medium-high heat, about 450 °F / 230 °C. Clean and lightly oil the grates with a little olive oil.
- 6
6. Thread the skewers, alternating marinated turkey breast, fresh pineapple, red bell pepper, green bell pepper, and red onion until all ingredients are used.
- 7
7. Place the skewers on the hot grill and cook for 12 to 14 minutes at 450 °F / 230 °C, turning every 3 to 4 minutes to brown all sides. Baste during cooking with the remaining marinade juices left in the bowl.
- 8
8. Cook until the turkey is fully done, firm, and reaches a safe internal temperature of 165 °F / 74 °C.
- 9
9. Remove the skewers from the grill and let rest for 3 minutes. Sprinkle with chopped fresh cilantro before serving.
- 10
10. Serve hot, making sure each portion includes turkey, pineapple, peppers, and grilled onion.
Chef tips
For deeper grill marks, do not move the skewers during the first 3 minutes of cooking. If you want a shinier finish, reserve a small portion of the marinade before it touches the turkey and use it as a final glaze.
Substitutions
You can substitute the turkey breast with boneless turkey thigh or chicken. The honey can be replaced with maple syrup, and the cilantro with fresh parsley for a milder flavor.
