Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes so they do not burn on the grill.

  2. 2

    2. Blanch the green beans in boiling water with a pinch of salt for 2 minutes. Transfer them to a bowl of cold water, then drain and dry well.

  3. 3

    3. In a large bowl, mix the yogurt, 15 ml (1 tbsp) olive oil, lime juice, lime zest, garlic, saffron, honey, ground cumin, black pepper, and salt until you have a smooth marinade.

  4. 4

    4. Add the chicken to the marinade and toss until all the pieces are well coated. Let it rest for 15 minutes in a cool place or refrigerated so it absorbs flavor.

  5. 5

    5. Cut the apricots in half and remove the pits. If the halves are very large, cut them again so they are close in size to the chicken pieces.

  6. 6

    6. Assemble the skewers by alternating chicken, apricot, and small folded bundles of green beans, pressing gently so everything stays in place without being packed too tightly.

  7. 7

    7. Preheat the grill to medium-high heat, about 425°F to 450°F (220°C to 230°C). Clean the grates and oil them with the remaining 15 ml (1 tbsp) olive oil.

  8. 8

    8. Place the skewers on the grill and cook for 12 to 14 minutes, turning every 3 to 4 minutes, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C), the apricots are marked, and the green beans are lightly charred.

  9. 9

    9. Remove the skewers from the grill and let them rest for 3 minutes. Sprinkle the chopped fresh mint over the top before serving.

  10. 10

    10. Serve the skewers hot, spooning over any juices collected on the platter to capture the flavor of the marinade and grilled fruit.

Chef tips

For deeper color, steep the saffron in 1 tablespoon of the lime juice for 5 minutes before mixing it into the yogurt. Do not overcrowd the skewers so heat can circulate and create even grill marks.

Substitutions

You can substitute the apricots with firm yellow plums and the green beans with thin asparagus. If you prefer chicken thighs, use the same amount and cook until they reach 165°F (74°C).
