Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes. Preheat the grill to medium-high heat, about 425 °F / 220 °C.

  2. 2

    2. In a large bowl, combine 30 ml (2 tbsp) soy sauce, 15 ml (1 tbsp) olive oil, half of the grated ginger, half of the minced garlic, lime juice, sweet paprika, salt, and black pepper.

  3. 3

    3. Add the chicken breast cubes to the marinade and toss well to coat. Let stand for 15 minutes while you prepare the vegetables.

  4. 4

    4. In another bowl, toss the zucchini and red onion with the remaining 15 ml (1 tbsp) olive oil and a pinch of salt.

  5. 5

    5. Thread the marinated chicken, zucchini, and red onion onto the skewers, alternating them evenly.

  6. 6

    6. For the glaze, place the passion fruit pulp, remaining 15 ml (1 tbsp) soy sauce, honey, the rest of the grated ginger, the rest of the minced garlic, and the sesame seeds in a small saucepan. Cook over medium heat for 4 to 5 minutes, until slightly thickened. Set aside.

  7. 7

    7. Clean and lightly oil the grill grates. Grill the skewers for 6 to 8 minutes per side, with the grill covered if possible, until the chicken reaches an internal temperature of 165 °F / 74 °C and the vegetables are tender with grill marks.

  8. 8

    8. During the last 2 minutes of cooking, brush the skewers with the passion fruit glaze so it lightly caramelizes without burning.

  9. 9

    9. Remove the skewers from the grill and let them rest for 3 minutes. Finish with chopped scallion and, if desired, a little extra sesame seeds before serving.

Chef tips

For a smokier flavor, keep a small high-heat direct zone and sear the skewers for 1 minute per side before moving them to medium heat. If the passion fruit pulp is very tart, add 1 extra teaspoon of honey to the glaze.

Substitutions

You can substitute the chicken breast with boneless chicken thighs. Zucchini can be replaced with mushrooms or green bell pepper. If you do not have passion fruit, use a mix of orange juice and a little lemon juice, though the flavor profile will change.
