Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.

  2. 2

In a large bowl, mix the plain yogurt, chipotle pepper in adobo, lemon juice, 2 tablespoons olive oil, garlic, fresh sage, honey, 1 teaspoon salt, and black pepper until a smooth marinade forms.

  3. 3

Add the chicken cubes to the bowl and toss well to coat completely with the marinade. Refrigerate for 15 minutes so the flavors can develop.

  4. 4

While the chicken marinates, place the kabocha squash in another bowl and toss with the remaining 1 tablespoon olive oil, smoked paprika, and 1/4 teaspoon salt. Add the red onion and toss gently.

  5. 5

Preheat the grill to medium-high heat, about 400 °F / 205 °C. Clean and lightly oil the grates.

  6. 6

Thread the skewers, alternating marinated chicken, kabocha squash, red onion, and black grapes until all ingredients are used. Discard any excess marinade that touched the raw chicken.

  7. 7

Place the skewers on the hot grill and cook for 14 to 18 minutes at 400 °F / 205 °C, turning every 3 to 4 minutes, until the chicken is fully cooked and reaches an internal temperature of 165 °F / 74 °C, the squash is tender, and the grapes are lightly caramelized.

  8. 8

Remove the skewers from the grill and let them rest for 3 minutes before serving so the chicken juices can redistribute.

  9. 9

Serve the skewers hot, making sure each portion includes chicken, kabocha squash, red onion, and grilled black grapes.

Chef tips

Cut the squash into small cubes so it cooks at the same pace as the chicken. For better color and caramelization, keep the grapes whole but dry them well before skewering.

Substitutions

You can substitute kabocha with pie pumpkin or butternut squash steamed for 5 minutes first. Fresh sage can be replaced with fresh thyme. For a dairy-free version, use unsweetened plain plant-based yogurt.
