Instructions
- 1
If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.
- 2
Preheat the grill to medium-high heat, about 450 °F / 230 °C.
- 3
Make the marinade by blending or processing the roasted red pepper, garlic, lemon juice, lemon zest, 45 ml (3 tbsp) olive oil, ground cumin, sweet paprika, dried oregano, salt, and black pepper until smooth.
- 4
Place the chicken in a large bowl, add the marinade, and toss well to coat every piece. Let it rest for 15 minutes in a cool spot while you prepare the vegetables.
- 5
Cut the artichoke hearts in half if large, and lightly pat the cherry tomatoes and artichokes dry with paper towels so they brown better.
- 6
Thread the marinated chicken, cherry tomatoes, and artichoke hearts onto the skewers, alternating evenly until all ingredients are used.
- 7
Brush the hot grill grates with the remaining 15 ml (1 tbsp) olive oil. Place the skewers on the grill and cook for 12 to 14 minutes at 450 °F / 230 °C, turning every 3 to 4 minutes, until the chicken is browned and reaches an internal temperature of 165 °F / 74 °C.
- 8
Transfer the skewers to a platter, sprinkle with fresh parsley, and let rest for 3 minutes before serving.
Chef tips
Do not overcrowd the skewers; leaving small gaps between ingredients helps heat circulate for better browning. For a smokier flavor, roast the red pepper yourself before making the marinade.
Substitutions
You can use boneless chicken thighs instead of breast. Parsley can be replaced with cilantro or basil. If you cannot find artichoke hearts, you can use zucchini chunks, though the flavor profile will change.
