Instructions
- 1
If using wooden skewers, soak them in water for 20 minutes to keep them from burning on the grill.
- 2
In a large bowl, combine the chicken with the garlic, lime zest, lime juice, 30 ml (2 tbsp) olive oil, salt, and black pepper. Marinate for 15 minutes in the refrigerator.
- 3
Meanwhile, make the glaze: toast the dried pasilla chili in a small skillet over medium heat for 30 to 45 seconds, until fragrant but not burnt. Transfer it to a cup with 60 ml (1/4 cup) hot water and let it soften for 10 minutes.
- 4
Blend or process the softened pasilla chili with the honey, apple cider vinegar, 15 ml (1 tbsp) olive oil, and butter until thick and smooth. Pour the mixture into a small saucepan and cook over low heat for 2 to 3 minutes, stirring, until slightly glossy. Remove from the heat and stir in the chopped basil.
- 5
Preheat the grill to medium-high heat, about 425 °F to 450 °F (220 °C to 230 °C). Clean and lightly oil the grates.
- 6
Build the skewers by threading chicken, nectarine wedges, and scallion pieces alternately until all ingredients are used.
- 7
Place the skewers on the hot grill and cook for 6 minutes. Turn and cook for 5 minutes more.
- 8
Brush the skewers with some of the pasilla chili, honey, and basil glaze. Continue grilling for 3 to 5 minutes, turning once and glazing again, until the chicken reaches a safe internal temperature of 165 °F (74 °C) and the nectarines are lightly caramelized.
- 9
Remove the skewers from the grill and let them rest for 3 minutes. Finish with extra basil and serve with the remaining glaze on the side.
Chef tips
For better browning, lightly pat the nectarines dry before threading them. Do not apply all the glaze too early, because the honey can burn quickly over high heat.
Substitutions
You can swap the nectarines for firm peaches or plums. Chicken breast can be replaced with boneless chicken thighs. For less heat, use only half of the pasilla chili.
