Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.

  2. 2

    2. In a large bowl, combine 30 ml (2 tbsp) olive oil, Dijon mustard, lemon juice, lemon zest, garlic, fresh rosemary, honey, salt, and black pepper until a smooth marinade forms.

  3. 3

    3. Add the chicken cubes to the bowl and toss well to coat completely with the marinade. Let rest for 15 minutes in a cool spot while you prepare the remaining ingredients.

  4. 4

    4. Place the kohlrabi cubes in another bowl and toss them with the remaining 15 ml (1 tbsp) olive oil and an extra pinch of salt to help them brown evenly.

  5. 5

    5. Build the skewers by alternating chicken, kohlrabi, and red grapes until all ingredients are used. Do not pack them too tightly so heat can circulate well.

  6. 6

    6. Preheat the grill to medium-high heat, about 425 °F / 220 °C. Clean and lightly oil the grates.

  7. 7

    7. Place the skewers on the hot grill and cook for 12 to 14 minutes, turning every 3 to 4 minutes, until the chicken is fully cooked and reaches an internal temperature of 165 °F / 74 °C, the kohlrabi is tender, and the grapes are lightly blistered.

  8. 8

    8. Transfer the skewers to a platter, sprinkle the fresh parsley over the top, and let them rest for 3 minutes before serving.

  9. 9

    9. Serve hot, spooning over any juices collected on the platter to reinforce the lemon, mustard, and rosemary flavors.

Chef tips

For even cooking, cut the chicken and kohlrabi into similar sizes. If the grapes are large, use one per section; if small, thread two together between the chicken pieces.

Substitutions

You can substitute the kohlrabi with tender turnip or firm watermelon radish. If you want a less sweet profile, replace the honey with the same amount of agave syrup or omit it entirely.
