Instructions

1. If using wooden skewers, soak them in water for 20 minutes. Preheat a gas or charcoal grill to medium-high heat, about 450°F / 230°C.
- 2
2. In a large bowl, combine the lemon zest and juice, honey, 2 tbsp olive oil, tarragon, garlic, Dijon mustard, salt, black pepper, and red pepper flakes.
- 3
3. Add the chicken breast cubes to the bowl and toss well to coat with the marinade. Let stand for 15 minutes in a cool spot while you prepare the vegetables and fruit.
- 4
4. In another bowl, toss the fennel and green grapes with the remaining 1 tbsp olive oil and an extra pinch of salt.
- 5
5. Thread the marinated chicken, fennel wedges, and green grapes onto the skewers, alternating them evenly.
- 6
6. Clean and lightly oil the grill grates. Place the skewers over direct heat at 450°F / 230°C and cook for 12 to 14 minutes, turning every 3 to 4 minutes, until the chicken is golden and reaches an internal temperature of 165°F / 74°C.
- 7
7. During the last 2 minutes, move the skewers to a medium heat zone, around 400°F / 205°C, so the grapes char lightly and the fennel softens without burning.
- 8
8. Remove the skewers from the grill and let them rest for 3 minutes. Sprinkle with chives and serve immediately.
Chef tips
To keep the grapes from slipping off, use small clusters or thread them through their firmest part. Do not marinate the chicken much longer, as the lemon can affect its texture.
Substitutions
You can swap the tarragon for fresh parsley or dill. If you do not have fennel, use zucchini chunks instead, though the aromatic profile will change. Honey can be replaced with maple syrup for a different sweet note.
