Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.

  2. 2

In a large bowl, mix the tamarind paste, 30 ml (2 tbsp) olive oil, chopped cilantro, garlic, ground cumin, smoked paprika, honey, lemon juice, salt, black pepper, and red pepper flakes until a smooth marinade forms.

  3. 3

Add the beef cubes to the bowl and toss well to coat completely with the marinade. Let marinate for 15 minutes in a cool kitchen spot or refrigerated.

  4. 4

In another bowl, toss the mushrooms, green bell pepper, and red onion with the remaining 15 ml (1 tbsp) olive oil and an extra pinch of salt.

  5. 5

Preheat the grill or grill pan over medium-high heat, about 450 °F / 230 °C. Clean and lightly oil the grates if needed.

  6. 6

Assemble the skewers, alternating beef, mushrooms, green bell pepper, and red onion until all ingredients are used.

  7. 7

Place the skewers on the hot grill and cook for 10 to 12 minutes, turning every 2 to 3 minutes so they brown evenly. For medium doneness, aim for the center of the beef to reach 145 °F / 63 °C.

  8. 8

Remove the skewers from the grill, sprinkle with a little more fresh cilantro, and let rest for 3 minutes before serving.

Chef tips

For better browning, lightly pat the beef dry before mixing it with the marinade. Do not overcrowd the skewers so heat can circulate well between the ingredients.

Substitutions

You can swap the beef for pork loin or firm tofu for a different version; in that case, adjust the cooking time. Green bell pepper can be replaced with red bell pepper, and cremini mushrooms with white mushrooms.
