Instructions
- 1
If using wooden skewers, soak them in water for 20 minutes. Preheat a gas or charcoal grill to medium-high heat, about 450 °F / 230 °C.
- 2
Place the pasilla chiles in a bowl with the 1/2 cup hot water and let them soften for 10 minutes. Transfer them to a blender or food processor with the garlic, cocoa powder, honey, lime juice, 2 tablespoons olive oil, cumin, smoked paprika, 1 teaspoon salt, and black pepper. Blend until thick and smooth.
- 3
Place the beef cubes in a large bowl, add the marinade, and toss well to coat all the meat. Let it rest for 15 minutes in a cool spot while you prepare the fruit and onions.
- 4
In a separate bowl, toss the peach wedges and spring onions with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt.
- 5
Thread the skewers, alternating beef, peaches, and spring onions so each skewer has a balanced mix of ingredients.
- 6
Clean and lightly oil the grill grates. Grill the skewers for 12 to 16 minutes at 450 °F / 230 °C, turning every 3 to 4 minutes, until the beef is browned and cooked to your preferred doneness and the peaches and onions are lightly charred.
- 7
Transfer the skewers to a platter and let them rest for 5 minutes. Sprinkle with the chopped fresh cilantro and lime zest before serving.
- 8
Serve hot, making sure each portion includes beef, smoked peaches, and grilled spring onions.
Chef tips
For better browning, pat the beef lightly dry before mixing it with the marinade. If the peaches are very ripe, cut them into thicker wedges so they hold up on the grill.
Substitutions
You can substitute nectarines for peaches and chunks of red onion for the spring onions. If pasilla chiles are unavailable, use ancho chiles for a sweeter profile.
