Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes. Preheat the grill to medium-high heat, about 450°F / 230°C.

  2. 2

In a large bowl, mix 2 tablespoons olive oil, 3 grated garlic cloves, 1 teaspoon smoked paprika, the cumin, oregano, red pepper flakes, 1 teaspoon salt, 1/2 teaspoon black pepper, the zest of 1 lime, and 1 tablespoon lime juice.

  3. 3

Add the beef cubes to the marinade and toss well to coat. Let rest for 15 minutes at room temperature.

  4. 4

In another bowl, make the sauce by mixing the Greek yogurt, 1 finely grated garlic clove, parsley, mint, honey, 1 teaspoon lime juice, 1 tablespoon olive oil, 1 teaspoon smoked paprika, and a pinch of salt. Chill until ready to use.

  5. 5

Thread the marinated beef onto skewers, alternating with chunks of red onion and folded piquillo peppers so they stay secure.

  6. 6

Lightly brush the skewers with the remaining tablespoon of olive oil. Place them on the grill at 450°F / 230°C and cook for 10 to 14 minutes, turning every 2 to 3 minutes, until the beef is browned and the vegetables are lightly charred.

  7. 7

Remove the skewers from the grill and let them rest for 3 minutes. Finish with a few more drops of juice from the second lime if desired.

  8. 8

Serve the skewers hot with the creamy herb lime sauce on the side or spooned over the top.

Chef tips

For even cooking, cut the beef into uniform cubes. Do not overcrowd the skewers so heat can circulate properly. If you prefer medium doneness, remove the beef at an internal temperature of 135°F / 57°C; for medium-well, 145°F / 63°C.

Substitutions

You can substitute the beef with lamb or chicken breast, adjusting the cooking time as needed. Greek yogurt can be replaced with plain lactose-free yogurt. If piquillo peppers are unavailable, use well-drained roasted red peppers.
