Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes. Preheat a gas or charcoal grill to medium-high heat, about 450°F / 230°C.

  2. 2

    2. In a large bowl, whisk together the tamari, orange juice, orange zest, 2 tablespoons olive oil, garlic, fresh thyme, honey, black pepper, salt, and red pepper flakes until the marinade is well combined.

  3. 3

    3. Add the beef sirloin cubes to the bowl and toss to coat completely. Let stand for 10 minutes while you prepare the vegetables.

  4. 4

    4. In a second bowl, toss the radishes, yellow bell pepper, and red onion with the remaining 1 tablespoon olive oil and an extra pinch of salt.

  5. 5

    5. Thread the skewers, alternating beef sirloin, radish, yellow bell pepper, and red onion until all ingredients are used.

  6. 6

    6. Clean and lightly oil the grill grates. Place the skewers on the hot grill at 450°F / 230°C.

  7. 7

    7. Grill for 12 to 14 minutes total, turning every 3 to 4 minutes for even browning. The beef should be well seared outside and juicy inside, and the radishes, yellow bell pepper, and red onion should be tender with lightly charred edges.

  8. 8

    8. Remove the skewers from the grill and rest for 3 minutes. Sprinkle with fresh parsley before serving.

Chef tips

For even cooking, cut the beef and vegetables into similar sizes. If you prefer medium doneness, remove the skewers when the center reaches about 145°F / 63°C.

Substitutions

You can swap the beef sirloin for pork loin or portobello mushrooms for a different variation. If you do not have tamari, use soy sauce; in that case, the recipe will no longer be gluten-free if the soy sauce contains wheat.
