Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes to keep them from burning on the grill.

  2. 2

Preheat the grill to medium-high heat, about 425 °F / 220 °C. Clean and lightly oil the grates with a little of the olive oil.

  3. 3

In a small bowl, whisk together the honey, lemon juice, lemon zest, dill, garlic, Dijon mustard, 30 ml (2 tbsp) olive oil, salt, black pepper, and red pepper flakes if using.

  4. 4

Place the salmon in a large bowl and add 2 tablespoons of the glaze. Toss gently to coat the cubes without breaking them.

  5. 5

In another bowl, toss the radishes and asparagus with the remaining olive oil so they are lightly coated.

  6. 6

Assemble the skewers, alternating salmon, radishes, and asparagus until all ingredients are used. Leave a little space between pieces so the heat can circulate properly.

  7. 7

Place the skewers on the hot grill. Cook for 5 to 6 minutes on the first side with the lid closed, keeping the grill around 425 °F / 220 °C.

  8. 8

Turn the skewers carefully and brush them with more glaze. Cook for 4 to 6 minutes more, until the salmon is just cooked through and juicy and the vegetables are tender with lightly charred edges. The internal temperature of the salmon should reach 145 °F / 63 °C.

  9. 9

Remove the skewers from the grill and let them rest for 2 minutes. Brush with the remaining glaze before serving to deepen the lemon, honey, and dill flavor.

  10. 10

Serve the skewers hot, making sure to divide the salmon, radishes, and asparagus evenly among the portions.

Chef tips

To keep the salmon from sticking, pat the cubes dry before tossing them with the glaze and do not move the skewers too early. If the radishes are large, halve them so they cook at the same rate as the fish.

Substitutions

You can swap the dill for parsley or chives. Honey can be replaced with maple syrup for a different flavor profile. If you do not have asparagus, use thick half-moons of zucchini instead. For a mustard-free version, omit it and add 1 extra teaspoon of olive oil.
