Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a medium baking dish with 1 teaspoon of the vegetable oil.
- 2
Heat the remaining vegetable oil in a skillet over medium heat. Add the chopped onion and cook for 5 minutes until softened. Stir in half of the minced garlic and cook for 30 seconds more.
- 3
Add the crushed tomato, dried oregano, sweet paprika, salt, and black pepper. Cook for 8 minutes over medium-low heat, stirring occasionally, until slightly thickened.
- 4
Transfer the sauce to a large bowl. Add the cooked drained white beans, beaten eggs, milk, and 50 g of the grated cheese. Mix well.
- 5
Add the day-old bread cubes to the mixture and stir gently so they absorb the liquid. Let stand for 5 minutes.
- 6
In a small bowl, combine the breadcrumbs with the remaining minced garlic, the remaining 30 g grated cheese, and an extra pinch of black pepper.
- 7
Pour the bread, tomato, and bean mixture into the greased baking dish. Scatter the breadcrumb, garlic, and cheese mixture evenly over the top.
- 8
Bake for 25 to 27 minutes at 200 °C / 400 °F, until the center is set and the top is golden and crisp.
- 9
Remove from the oven and let rest for 5 minutes. Finish with chopped parsley before serving.
Chef tips
If the bread is very dry, let the mixture rest 2 to 3 extra minutes before baking so the center stays tender. For a deeper golden top, place the dish under the broiler for 1 to 2 minutes at the end, watching closely.
Substitutions
You can use red beans or chickpeas instead of white beans. Parsley can be replaced with chives or cilantro. For an even more economical version, use any melty cheese you already have on hand.
