Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a small baking dish with a little of the vegetable oil.

  2. 2

    2. In a large skillet, heat the remaining vegetable oil over medium heat. Add the onion and cook for 4 minutes until translucent.

  3. 3

    3. Add the garlic and chopped mushrooms. Cook for 6 to 8 minutes, stirring, until the mushrooms release their moisture and then lightly brown.

  4. 4

    4. Stir in half of the sweet paprika, the dried oregano, salt, and black pepper. Mix well and turn off the heat.

  5. 5

    5. In a large bowl, combine the rolled oats with the milk. Let stand for 3 minutes so the oats begin to soften.

  6. 6

    6. Add the beaten eggs, chopped parsley, and the mushroom mixture to the oats. Also add half of the grated cheese and mix until evenly combined.

  7. 7

    7. Pour the mixture into the greased baking dish and smooth the top with a spoon. Sprinkle the remaining grated cheese and the rest of the sweet paprika over the surface.

  8. 8

    8. Bake for 25 minutes at 200 °C / 400 °F, or until the casserole is set in the center and the top is nicely golden.

  9. 9

    9. Let rest for 5 minutes before slicing and serving so the texture firms up slightly.

Chef tips

For a firmer texture, let the mixture rest 5 extra minutes before baking. You can also brown the top for the last 2 to 3 minutes under the broiler, watching closely.

Substitutions

You can use red onion instead of white onion. Parsley can be replaced with cilantro or chives. For a stronger flavor, use a semi-hard cheese instead of mozzarella.
