An original Chilean recipe that blends the spirit of coastal cazuela with a gratinated oven finish. It features sliced potatoes, sautéed mussels, sweet corn, an aromatic broth, and a golden chanco cheese topping, finished with a fresh tomato, red onion, dill and lemon pebre.

Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Grease a medium baking dish with the butter.

  2. 2

In a large skillet, heat the oil over medium heat. Add the white onion and cook for 5 minutes until softened. Stir in the garlic and cook 1 minute more.

  3. 3

Add the cooked mussels, half of the merken, the oregano, half of the salt, and the black pepper. Pour in the white wine and cook for 2 to 3 minutes until slightly reduced.

  4. 4

Add the hot broth and the cream to the skillet. Mix well, add the corn kernels, and cook for 3 minutes over low heat so the flavors come together. Remove from the heat.

  5. 5

Arrange a layer of sliced potatoes on the bottom of the baking dish. Cover with part of the mussel and corn mixture. Repeat the layers until everything is used, making sure the potatoes are well moistened with the liquid. Adjust with the remaining salt if needed.

  6. 6

Sprinkle the grated chanco cheese, breadcrumbs, and the remaining merken over the top.

  7. 7

Cover the dish with foil and bake for 25 minutes at 200 °C / 400 °F. Remove the foil and bake 15 minutes more, or until the potatoes are tender and the top is golden and bubbling.

  8. 8

While it bakes, make the pebre by mixing the tomato, red onion, fresh dill, fresh cilantro, and lemon juice in a small bowl. Stir and let it rest for 10 minutes.

  9. 9

Remove the gratinated cazuela from the oven and let it rest for 5 minutes before serving. Serve each portion with a spoonful of dill pebre on top.

Chef tips

If the mussels release a lot of liquid, drain them well before sautéing so the dish does not become watery. For a deeper gratin, place the dish under the broiler for 2 to 3 minutes at the end, watching closely so it does not burn.

Substitutions

You can replace chanco cheese with mantecoso cheese or low-moisture mozzarella. Dill can be swapped for extra cilantro if unavailable. For a version without fish broth, use vegetable broth.
