Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Lightly grease a small baking dish or oven-safe skillet with a little of the olive oil.

  2. 2

In a medium bowl, combine the corn kernels, cornmeal, all-purpose flour, baking powder, 3 g (1/2 teaspoon) salt, 1 g (1/4 teaspoon) black pepper, and 1 g (1/2 teaspoon) garlic powder.

  3. 3

In another bowl, whisk the eggs with the buttermilk. Stir in 15 g (1 tablespoon) melted butter, then fold this mixture into the dry ingredients. Add the shredded white cheddar and half of the chopped scallions. Pour the batter into the prepared dish.

  4. 4

Bake the savory corn pudding for 22 to 26 minutes at 220 °C / 425 °F, until puffed, golden around the edges, and set in the center.

  5. 5

Meanwhile, toss the green beans with 15 ml (1 tablespoon) olive oil, 2 g (1/4 teaspoon) salt, 1 g (1/4 teaspoon) black pepper, and 1 g (1/2 teaspoon) garlic powder. Spread them on a sheet pan and roast at 220 °C / 425 °F for 15 to 18 minutes, until tender and lightly blistered.

  6. 6

Season the pork chops on both sides with the remaining 3 g (1/2 teaspoon) salt, remaining 1 g (1/2 teaspoon) black pepper, and the remaining garlic powder.

  7. 7

Heat the remaining 15 ml (1 tablespoon) olive oil in a large oven-safe skillet over medium-high heat. Sear the pork chops for 2 to 3 minutes per side until browned. Add the diced apple around the meat and transfer the skillet to the oven.

  8. 8

Roast the pork chops at 220 °C / 425 °F for 8 to 12 minutes, until the thickest part reaches 63 °C / 145 °F. Transfer the chops to a plate and let rest for 5 minutes.

  9. 9

Return the skillet to medium heat. Add the remaining butter, fresh sage, apple cider vinegar, and honey. Cook for 2 to 3 minutes, stirring and lightly mashing the apple to create a rustic glossy glaze.

  10. 10

Serve each pork chop with a portion of savory corn pudding. Spoon the apple-sage butter glaze over the top, add the roasted green beans on the side, and finish the pudding with the remaining scallions.

Chef tips

For better browning, pat the pork chops very dry before seasoning. If the corn pudding browns too quickly, loosely cover it with foil during the last few minutes of baking.

Substitutions

You can use pork tenderloin medallions instead of chops, adjusting the cooking time as needed. White cheddar can be replaced with Monterey Jack, and fresh sage can be swapped for fresh thyme for a different flavor profile.
