Instructions

  1. 1

    1. If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.

  2. 2

    2. In a large bowl, whisk together the apple cider, Dijon mustard, 2 tablespoons (30 ml) olive oil, garlic, fresh rosemary, honey, black pepper, 1 teaspoon salt, apple cider vinegar, and red pepper flakes until well combined.

  3. 3

    3. Add the cubed chicken breast to the marinade and toss to coat completely. Marinate for 15 minutes in the refrigerator.

  4. 4

    4. Cut the firm pear into large chunks and the leek into 1.25-inch / 3 cm pieces. Gently separate the leek layers and toss them with the remaining 1 tablespoon olive oil, melted butter, and a pinch of salt.

  5. 5

    5. Thread the marinated chicken, pear, and leek onto the skewers, alternating ingredients until everything is used.

  6. 6

    6. Preheat the grill to medium-high heat, about 400 °F / 205 °C. Clean and lightly oil the grates.

  7. 7

    7. Place the skewers on the grill and cook for 7 to 9 minutes on the first side. Turn and cook for 7 to 9 minutes more, brushing with the remaining marinade during the first minutes of grilling. The chicken should reach a safe internal temperature of 165 °F / 74 °C.

  8. 8

    8. When the pear is lightly smoky and caramelized and the leek is tender with golden edges, remove the skewers from the grill.

  9. 9

    9. Let the skewers rest for 3 minutes before serving so the chicken juices can redistribute.

Chef tips

For better grill marks, lightly pat the skewers dry with paper towels before grilling. Use firm pears such as Bosc or Anjou so they hold their shape.

Substitutions

You can swap the leek for sweet onion and the apple cider for unsweetened apple juice plus a few extra drops of vinegar. If using chicken thigh instead, increase cooking time by 2 to 4 minutes and always verify an internal temperature of 165 °F / 74 °C.
