Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Place the sweet potato on a baking sheet or tray, toss with 1 tablespoon vegetable oil, a pinch of salt, and a little black pepper. Roast for 20 to 25 minutes, until very tender.

  2. 2

    2. While the sweet potato roasts, combine the ground turkey, breadcrumbs, beaten egg, half of the yellow onion grated, 2 minced garlic cloves, dried sage, smoked paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper in a bowl. Shape into 4 oval patties and set aside.

  3. 3

    3. Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Cook the turkey patties for 4 to 5 minutes per side, until browned and cooked through. Transfer to a plate and keep warm.

  4. 4

    4. In the same skillet, add the butter and the remaining sliced yellow onion. Cook over medium heat for 6 to 8 minutes, stirring, until soft and golden. Add 1 minced garlic clove and cook 30 seconds more.

  5. 5

    5. Sprinkle the all-purpose flour over the onion and cook for 1 minute, stirring. Gradually whisk in the chicken broth and Worcestershire sauce, scraping up the browned bits. Cook for 3 to 5 minutes until a smooth gravy forms. Adjust with the remaining salt and black pepper. Return the patties to the skillet and spoon the gravy over them to warm through for 2 minutes.

  6. 6

    6. When the sweet potato is ready, transfer it to a bowl and mash it. Add the chives, cornstarch, 1 tablespoon butter, and a pinch of salt and pepper. Mix well and shape into 8 small cakes.

  7. 7

    7. Wipe out or use another nonstick skillet and heat 1 tablespoon vegetable oil over medium heat. Brown the sweet potato cakes for 2 to 3 minutes per side, until firm and golden-crusted.

  8. 8

    8. For the warm salad, heat the last tablespoon of vegetable oil in a skillet. Add the corn and red onion and sauté for 3 to 4 minutes. Stir in the apple cider vinegar, fresh dill, Dijon mustard, and a pinch of salt and pepper; cook 1 minute more.

  9. 9

    9. Serve 1 turkey patty per portion with plenty of sweet onion gravy, 2 sweet potato cakes, and a serving of warm dill corn salad.

Chef tips

For a deeper, shinier gravy, let the onion brown well before adding the flour. If the sweet potato mixture feels too soft, let it rest for 5 minutes before shaping the cakes.

Substitutions

You can use ground chicken instead of turkey. Fresh dill can be swapped for parsley, and chicken broth for turkey or vegetable broth. If you do not have cornstarch, use 2 additional tablespoons of breadcrumbs in the sweet potato cakes.
