Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Toss the sweet potato with 2 teaspoons olive oil, half of the smoked paprika, half of the garlic powder, and a pinch of salt. Spread on a sheet pan and roast for 25 to 30 minutes at 220 °C / 425 °F, flipping halfway, until tender and browned at the edges.
- 2
While the sweet potato roasts, make the hot honey by stirring together the honey, hot sauce, and red pepper flakes, if using, in a small bowl. Set aside.
- 3
Heat a large skillet over medium-high heat. Add the remaining olive oil and the ground beef. Cook for 6 to 8 minutes, breaking it up with a spatula, until nicely browned and fully cooked through.
- 4
Season the beef with the remaining smoked paprika, remaining garlic powder, salt, and black pepper. Cook 1 more minute to blend the flavors, then remove from the heat.
- 5
Divide the cottage cheese between two bowls. Top with the roasted sweet potato and cooked beef, arranging each component in sections for the classic bowl presentation.
- 6
Finish with the hot honey drizzled over the top and sprinkle with the chopped chives or green onion. Serve right away.
- 7
If you prefer the bowl warm rather than hot, let the sweet potato and beef rest for 2 minutes before assembling so the cottage cheese does not heat up too much.
Chef tips
For the best texture, roast the sweet potato in a single layer without crowding the pan. Brown the beef well for deeper flavor, and add the hot honey at the end so it keeps its sweet-spicy contrast.
Substitutions
You can use ground turkey instead of beef, though the classic version is made with beef. Chives can be replaced with green onion. Use a cayenne-style hot sauce for a more traditional result.
