Instructions
- 1
Preheat the oven to 200 °C / 400 °F.
- 2
Pat the pork loin dry with paper towels and season it all over with 6 g salt, black pepper, and smoked paprika.
- 3
Heat a large oven-safe skillet or a regular skillet over medium-high heat. Add the olive oil and sear the pork loin for 2 to 3 minutes per side until well browned. Transfer the pork to a baking dish if your skillet is not oven-safe.
- 4
Lower the heat to medium and add the garlic to the same skillet. Cook for 30 seconds, stirring so it becomes fragrant without burning.
- 5
Add the brewed coffee, orange juice, orange zest, honey, Dijon mustard, apple cider vinegar, fresh thyme, and the remaining 2 g salt. Cook for 4 to 5 minutes until the mixture reduces slightly.
- 6
Remove the skillet from the heat and add the butter, stirring until melted and glossy.
- 7
Pour half of the glaze over the pork loin and roast at 200 °C / 400 °F for 35 minutes, basting the meat with the remaining glaze halfway through cooking.
- 8
Continue roasting for 10 to 15 minutes more, or until the center of the loin reaches 63 °C / 145 °F.
- 9
Remove the pork from the oven, loosely cover it with aluminum foil, and let it rest for 10 minutes so the juices redistribute.
- 10
Slice the pork loin and serve it with the pan juices and the coffee, orange, and mustard glaze left in the dish or skillet.
Chef tips
For deeper flavor, make the glaze with very strong brewed coffee. Do not skip the final resting time; it helps keep the slices juicy and clean when carving.
Substitutions
You can replace the honey with maple syrup for a different note. If you do not have fresh thyme, use 1 teaspoon dried thyme. Dijon mustard can be swapped for whole grain mustard, though the texture will be more rustic.
