Instructions

  1. 1

Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, and garlic powder. Lightly and evenly dust the chicken with the all-purpose flour.

  2. 2

Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter. Once hot, sear the chicken breasts for 4-5 minutes per side until golden. Transfer to a plate; they do not need to be fully cooked yet.

  3. 3

Reduce the heat to medium. Add the remaining tablespoon of butter and the minced garlic. Cook for 30 seconds, stirring, until fragrant but not overly browned.

  4. 4

Stir in the sun-dried tomatoes, red pepper flakes, dried oregano, and dried thyme. Cook for 1 minute so the tomatoes soften slightly and the herbs bloom in the fat.

  5. 5

Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits. Let it simmer gently for 2-3 minutes to reduce slightly.

  6. 6

Add the heavy cream and grated Parmesan cheese. Stir over medium-low heat until the sauce is smooth and creamy, about 2-3 minutes.

  7. 7

Return the chicken breasts to the skillet along with any accumulated juices. Cook over low heat for 8-10 minutes, basting with the sauce, until the center reaches 165 °F / 74 °C.

  8. 8

If you prefer to finish it in the oven, transfer the oven-safe skillet to 375 °F / 190 °C for 8-10 minutes, or until the chicken reaches 165 °F / 74 °C.

  9. 9

Taste and adjust with more salt and pepper if needed. Turn off the heat, add the fresh basil, and let it rest for 2 minutes before serving.

  10. 10

Serve the Marry Me Chicken hot, spooning plenty of the sun-dried tomato Parmesan sauce over the top.

Chef tips

For a silky sauce, lower the heat before adding the cream and Parmesan. If the chicken breasts are very thick, butterfly or gently pound them so they cook evenly.

Substitutions

You can use boneless chicken thighs, adjusting the cooking time as needed. Fresh basil can be swapped for parsley, though basil gives the most classic finish. It is best not to replace the cream or Parmesan if you want the traditional version.
