Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking dish with a little of the olive oil.

  2. 2

    2. In a bowl, combine the juice and zest of the 2 oranges, chopped garlic, mild ground chili, sweet paprika, dried oregano, mustard, 2 tablespoons of the olive oil, 1 teaspoon salt, black pepper, and sugar if using.

  3. 3

    3. Place the pork skirt steak in a dish or bag, coat it with the orange mixture, and let it marinate for 15 minutes while you prepare the side dish.

  4. 4

    4. For the rustic bake, melt the butter in a skillet over medium heat. Add the onion and the white part of the scallions and cook for 5 to 6 minutes until softened. Stir in the corn kernels and cook 3 minutes more.

  5. 5

    5. Add the fine cornmeal to the skillet and stir for 1 minute so it absorbs the butter and juices. Gradually pour in the milk, stirring, and cook for 3 to 4 minutes until thickened. Remove from the heat.

  6. 6

    6. Add the green part of the scallions, half of the grated pategrás cheese, the egg, fresh parsley, and 1/2 teaspoon salt. Mix well and transfer everything to the greased baking dish.

  7. 7

    7. Sprinkle the remaining grated pategrás cheese on top. Bake the corn mixture for 20 to 25 minutes at 200 °C / 400 °F, until set and golden on the surface.

  8. 8

    8. While the bake cooks, remove the pork from the marinade and reserve the liquid. Heat 1 tablespoon olive oil in a large skillet over medium-high heat and sear the pork for 4 to 5 minutes per side.

  9. 9

    9. Transfer the seared pork to a tray or small baking dish and roast at 200 °C / 400 °F for 12 to 15 minutes, or until fully cooked but still juicy.

  10. 10

    10. Pour the reserved marinade into a small saucepan and cook over medium heat for 4 to 5 minutes until slightly reduced and glaze-like. This concentrates the orange, garlic, mustard, and spices.

  11. 11

    11. Remove the pork from the oven and let it rest for 5 minutes. Slice into thick strips and brush or spoon over the hot orange glaze.

  12. 12

    12. Serve the pork skirt steak hot with the rustic corn and scallion bake.

Chef tips

For a deeper golden top on the bake, broil it for the last 2 to 3 minutes. The pork is best when not overcooked; let it rest before slicing to keep it juicy.

Substitutions

You can replace pategrás cheese with firm mozzarella or a semi-hard Argentine-style cheese. If you cannot find pork skirt steak, use thin pork shoulder steaks and adjust the cooking time. Scallions can be replaced with finely chopped leek.
