Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a 12-cup muffin pan with a little olive oil.
- 2
In a skillet over medium heat, warm the remaining olive oil. Add the onion and cook for 3 minutes until softened. Stir in the garlic and cook for 30 seconds more. Add the chopped kale and sauté for 2 to 3 minutes until wilted. Remove from the heat and let it cool slightly.
- 3
In a large bowl, combine the ground turkey, cottage cheese, oats, beaten egg, smoked paprika, dried oregano, salt, and black pepper.
- 4
Add the sautéed onion, garlic, and kale to the turkey mixture. Mix well until evenly combined.
- 5
Divide half of the mixture among the 12 muffin cups. Place a piece of roasted red bell pepper in the center of each one, then cover with the remaining turkey mixture, pressing gently to enclose the filling.
- 6
Sprinkle the grated Parmesan cheese over the top of each muffin.
- 7
Bake for 22 to 25 minutes at 200 °C / 400 °F, or until the muffins are firm, golden on top, and the turkey is fully cooked.
- 8
Let rest for 5 minutes out of the oven before unmolding. Serve warm or at room temperature.
Chef tips
For a more even texture, chop the kale very finely. If your cottage cheese is very wet, drain it for 10 minutes so the mixture does not become too loose.
Substitutions
You can swap the kale for well-drained spinach. Parmesan can be replaced with another aged grated cheese. If you do not have quick oats, pulse regular oats for a few seconds.
