Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F. Grease a baking dish about 28 x 20 cm with a small amount of the vegetable oil.
- 2
2. For the filling, heat 1 tablespoon of the vegetable oil in a large skillet over medium heat. Add the white onion and cook for 8 minutes, stirring, until soft and lightly golden. Add the garlic and cook for 1 more minute.
- 3
3. Add the ground lamb to the skillet and cook for 6 to 8 minutes, breaking it up with a spoon, until no longer pink. Season with sweet paprika, ground cumin, dried oregano, half of the salt, and half of the black pepper.
- 4
4. Pour in the white wine and cook for 3 to 4 minutes until the liquid is almost fully reduced. Remove from the heat and stir in half of the fresh basil. Set aside.
- 5
5. For the corn topping, place the corn kernels, whole milk, and fine cornmeal in a blender or food processor. Blend until thick but still slightly textured.
- 6
6. Heat the butter with the remaining tablespoon of vegetable oil in a large pot over medium heat. Add the corn mixture and cook for 10 to 12 minutes, stirring constantly with a wooden spoon, until thickened. Add the remaining salt and black pepper.
- 7
7. Remove the pot from the heat. Stir in the grated Chanco cheese and mix until partially melted. Let it cool for 5 minutes, then add the eggs, mixing quickly so they incorporate without scrambling.
- 8
8. Spread the lamb filling in the greased baking dish. Scatter the black olives and the remaining fresh basil over the top.
- 9
9. Cover the filling with the corn topping, smoothing the surface with a spatula. Sprinkle the sugar evenly over the top.
- 10
10. Bake for 25 minutes at 200 °C / 400 °F. Then turn on the broiler or raise the temperature to 220 °C / 425 °F and bake 5 minutes more, until the top is golden with lightly charred spots.
- 11
11. Let the pie rest for 8 minutes before serving so it sets and is easier to portion.
Chef tips
If using frozen corn, thaw and drain it well to avoid a watery topping. For deeper flavor, let the onion caramelize lightly before adding the lamb.
Substitutions
You can replace the lamb with ground beef for a milder flavor. Chanco cheese can be substituted with low-moisture mozzarella or a mild melting cheese. If you prefer not to use wine, replace it with the same amount of stock.
