Instructions

  1. 1

    1. Preheat the oven to 190 °C / 375 °F. Lightly grease a medium baking dish with a little of the olive oil.

  2. 2

    2. Heat a large skillet over medium heat and add the remaining olive oil. Add the onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds more.

  3. 3

    3. Add the ground turkey to the skillet. Cook for 6 to 8 minutes, breaking it up with a spatula, until no longer pink. Season with Dijon mustard, sweet paprika, dried oregano, half of the salt, and black pepper.

  4. 4

    4. Add the fresh spinach to the hot turkey mixture and stir for 1 to 2 minutes until wilted. Remove from the heat and let it cool for 5 minutes.

  5. 5

    5. In a large bowl, whisk the egg whites with the cottage cheese, ground oats, and remaining salt until evenly combined.

  6. 6

    6. Add the cooled turkey and spinach mixture to the bowl. Stir well so all ingredients are evenly distributed.

  7. 7

    7. Pour the mixture into the greased baking dish and smooth the top. Sprinkle the sesame seeds over the surface to create a light crust.

  8. 8

    8. Bake for 28 to 30 minutes at 190 °C / 375 °F, until the center is set and the top is lightly golden.

  9. 9

    9. Let rest for 5 minutes before slicing into 4 portions and serving.

Chef tips

For a firmer texture, let the bake rest a few extra minutes before slicing. If you want a deeper golden finish, broil for 1 to 2 minutes at the end, watching closely.

Substitutions

You can swap the turkey for ground chicken. The cottage cheese can be replaced with a similar low-fat cottage cheese style cheese. If you need a gluten-free version, use certified gluten-free oats.
