Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Lightly grease a small baking dish with a little of the olive oil.

  2. 2

Heat a skillet over medium heat with the remaining olive oil. Sauté the onion for 3 to 4 minutes, add the garlic, and cook 30 seconds more. Stir in the chopped broccoli and cook for 3 minutes, just until it turns bright green. Remove from the heat and let it cool slightly.

  3. 3

In a large bowl, combine the ground turkey, rolled oats, beaten egg, 120 g (1/2 cup) of the Greek yogurt, Dijon mustard, smoked paprika, dried oregano, salt, black pepper, fresh parsley, lemon zest, and 25 g (about 1/3 cup) of the grated Parmesan cheese.

  4. 4

Add the sautéed onion, garlic, and broccoli to the turkey mixture. Mix well with a spoon or clean hands until fully combined, without over-packing the mixture.

  5. 5

Transfer half of the mixture to the baking dish and gently press it into an even base. Spread the remaining Greek yogurt evenly on top, leaving a small border around the edges. Cover with the rest of the turkey mixture and smooth the surface.

  6. 6

Sprinkle the remaining Parmesan cheese over the top to create a golden crust. Bake for 30 to 35 minutes at 200 °C / 400 °F, or until the top is nicely browned and the center is fully cooked.

  7. 7

Let it rest for 5 minutes before slicing. Serve hot in portions, making the most of the creamy yogurt center and oat-Parmesan crust.

Chef tips

Chop the broccoli very finely so it blends in better and the bake slices cleanly. If the mixture feels too wet, add 1 or 2 extra tablespoons of oats.

Substitutions

You can substitute the turkey with ground chicken. Parmesan can be replaced with a similar aged grated cheese. If you do not have Greek yogurt, use thick unsweetened plain yogurt.
