Instructions

1. In a large bowl, combine the rolled oats with the cooked white beans and mash part of the beans with a fork until you have a rustic mixture with some whole pieces remaining.
- 2
2. Add the grated carrot, chopped onion, beaten eggs, grated cheese, all-purpose flour, chopped garlic, 1 tablespoon vegetable oil, salt, black pepper, and 1/2 teaspoon sweet paprika. Mix well until fully combined and let it rest for 5 minutes so the oats can absorb some moisture.
- 3
3. Heat a medium nonstick skillet over medium heat with the remaining 1 tablespoon vegetable oil. Spread the mixture into the skillet and press it down with a spatula to form a thick, compact cake.
- 4
4. Cook the cake over medium heat for 8 to 10 minutes on the first side, until golden. Flip it carefully using a plate or flat lid and cook for 8 to 10 minutes on the other side, until the center is set and the outside is crisp. If you prefer to finish it in the oven, transfer it to a preheated oven at 392°F / 200°C for 5 minutes.
- 5
5. Meanwhile, make the sauce: in a small saucepan combine the crushed tomato, dried oregano, sugar, the remaining 1/2 teaspoon sweet paprika, and water. Cook over medium-low heat for 8 minutes, stirring occasionally, until slightly thickened.
- 6
6. Taste the sauce and adjust with a little more salt if needed. Remove the cake from the heat, let it rest for 2 minutes, and sprinkle the fresh parsley on top.
- 7
7. Serve the golden oat, carrot and bean cake in portions, with the warm oregano tomato sauce spooned over the top or on the side.
Chef tips
To flip it without breaking, slide the cake onto a large plate, cover with the skillet, and carefully invert. If the mixture feels too wet, add 1 or 2 extra tablespoons of flour or oats.
Substitutions
You can use pinto beans or chickpeas instead of white beans. The cheese can be replaced with any affordable melting cheese. For a dairy-free version, omit the cheese and add 2 extra tablespoons of oats, though the texture will change.
