Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a medium baking dish with 1 teaspoon of the vegetable oil.

  2. 2

    2. Place the rolled oats in a large bowl and pour in the milk. Let them soak for 10 minutes.

  3. 3

    3. Meanwhile, heat the remaining vegetable oil in a skillet over medium heat. Add the onion and cook for 4 minutes until softened.

  4. 4

    4. Stir in the garlic and cook for 30 seconds. Add the tomato, sweet paprika, dried oregano, salt, and black pepper. Cook for 5 minutes, stirring, until it forms a thick sauté.

  5. 5

    5. Add the chopped green cabbage to the sauté and cook 4 minutes more, just until it starts to soften. Remove from the heat and let it cool for 3 minutes.

  6. 6

    6. To the bowl with the soaked oats, add the beaten eggs, wheat flour, and baking powder. Mix well until you have an even base.

  7. 7

    7. Fold the cabbage and tomato mixture into the bowl. Stir until all the ingredients are evenly combined.

  8. 8

    8. Pour the mixture into the greased baking dish and smooth the top with a spoon.

  9. 9

    9. Bake at 200 °C / 400 °F for 30 minutes, or until the bake is set in the center and golden on top.

  10. 10

    10. Let it rest for 5 minutes before slicing and serving.

Chef tips

For a more golden top, place the dish on the upper oven rack for the last 5 minutes. If the cabbage releases a lot of moisture, cook it 1 to 2 extra minutes in the skillet before mixing.

Substitutions

You can use standard cabbage in place of green cabbage. Milk can be replaced with an unsweetened plant-based drink if you want a dairy-free version, but then the allergens and tags should also be adjusted. Fresh tomato can be replaced with thick crushed tomato in the same amount.
