1. Preheat the oven to 200 °C / 400 °F and lightly grease a medium baking dish with a little of the vegetable oil.
- 2
2. Place the rolled oats in a large bowl, pour in the hot water, and let stand for 10 minutes so the oats soften and hydrate.
- 3
3. Meanwhile, heat 1 tablespoon of the vegetable oil in a skillet over medium heat. Sauté the onion for 4 to 5 minutes until translucent. Add the garlic and cook for 1 minute more.
- 4
4. Add the grated carrot to the skillet and cook for 3 minutes, stirring. Add 1 teaspoon of the sweet paprika, the dried oregano, salt, and black pepper.
- 5
5. Transfer the sautéed mixture to the bowl with the hydrated oats. Add the lightly mashed cooked white beans, eggs, half of the grated cheese, and fresh parsley. Mix well until you have a moist, even mixture.
- 6
6. Spoon the mixture into the greased baking dish and level the top with a spoon.
- 7
7. In a small bowl, combine the breadcrumbs with the remaining grated cheese, the remaining tablespoon of vegetable oil, and the remaining teaspoon of sweet paprika. Sprinkle this crust evenly over the top of the bake.
- 8
8. Bake for 30 to 35 minutes at 200 °C / 400 °F, until the bake is set and the crust is golden.
- 9
9. Let it rest for 5 minutes before slicing and serving so it holds together better.
Chef tips
If you want a firmer texture, let the mixture rest for 5 minutes before baking. You can also serve it with a simple tomato or cabbage salad.
Substitutions
You can use pinto beans or chickpeas instead of white beans. The cheese can be replaced with a plant-based alternative for a dairy-free version, although that will change the allergen profile and dietary tags.
