Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a medium baking dish with a little of the vegetable oil.
- 2
Place the potatoes in a pot with water and a pinch of salt. Cook for 12 to 15 minutes, until tender but not falling apart. Drain and roughly mash with a fork.
- 3
Meanwhile, heat 1 tablespoon of the vegetable oil in a large skillet over medium heat. Add the onion and cook for 6 to 8 minutes until golden around the edges.
- 4
Add the garlic, cabbage, sweet paprika, oregano, the remaining salt, and black pepper. Cook for 6 to 8 minutes, stirring, until the cabbage softens and reduces in volume. Remove from the heat.
- 5
In a large bowl, combine the mashed potatoes, rolled oats, eggs, milk, and half of the grated cheese. Fold in the cabbage and onion mixture and stir well until evenly combined and moist.
- 6
Transfer the mixture to the prepared baking dish and level the top. Sprinkle the remaining grated cheese over the surface.
- 7
Bake for 20 minutes at 200 °C / 400 °F. If you want a more golden top, broil for 2 to 3 additional minutes, watching closely.
- 8
Let it rest for 5 minutes before slicing and serving so the bake can set and be easier to portion.
Chef tips
For a firmer texture, let the mixture rest for 5 minutes before baking so the oats absorb some of the milk. You can also use an oven-safe skillet to save on cleanup.
Substitutions
You can replace the cheese with a similar amount of firm fresh cheese, or omit it for a dairy-free version by using unsweetened plant-based milk instead of regular milk. Rolled oats can be swapped for quick oats, though the texture will be denser.
