Instructions
- 1
Preheat the oven to 200 °C / 400 °F and grease a baking dish about 30 x 20 cm with 10 g (2 tsp) of butter.
- 2
Boil the green beans in salted water for 4 to 5 minutes, until tender but still firm. Drain and briefly cool under cold water; drain well again.
- 3
In a large skillet over medium heat, melt 20 g (1 1/2 tbsp) butter with the olive oil. Sauté the onion for 6 minutes until soft. Add the garlic and cook 1 minute more.
- 4
Pour the white wine into the skillet and cook for 2 minutes so it reduces slightly. Add the cream, milk, mustard, dill, lemon zest, black pepper, and salt. Cook over medium-low heat for 3 to 4 minutes, stirring, until combined.
- 5
Add the cooked mote, green beans, and smoked salmon to the skillet. Mix gently so the salmon does not break up too much. Stir in 100 g (3.5 oz) of the grated cheese and cook 1 minute more.
- 6
Transfer the mixture to the prepared baking dish and spread it evenly.
- 7
In a bowl, mix the chuchoca, crumbled bread roll, and the remaining 60 g (2 oz) grated cheese. Sprinkle this mixture over the top of the bake.
- 8
Bake at 200 °C / 400 °F for 22 to 25 minutes, until bubbling and golden on top. For deeper color, broil for 2 to 3 additional minutes, watching closely.
- 9
Remove from the oven and let rest for 5 minutes before serving so it sets slightly.
Chef tips
For better texture, dry the green beans well after cooking. Smoked salmon already adds salt, so taste the mixture before making the final seasoning adjustment.
Substitutions
You can replace the smoked salmon with cooked flaked reineta. If chanco cheese is unavailable, use mantecoso. The bread roll can be replaced with dry country bread crumbs.
