Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Lightly grease a medium baking dish with a little of the olive oil.

  2. 2

Heat the remaining olive oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds more.

  3. 3

Add the ground turkey to the skillet and cook for 6 to 8 minutes, breaking it up with a spoon, until no longer pink. Season with the salt, black pepper, sweet paprika, and dried oregano.

  4. 4

Add the broccoli in small florets to the skillet and cook for 3 minutes, stirring, so it softens slightly while keeping some texture. Remove from the heat and let it cool for 5 minutes.

  5. 5

In a large bowl, mix the cottage cheese, eggs, plain Greek yogurt, Dijon mustard, and half of the grated Parmesan until creamy.

  6. 6

Add the warm turkey and broccoli mixture to the bowl and stir well to combine all the ingredients.

  7. 7

Transfer the mixture to the prepared baking dish and spread it evenly.

  8. 8

In a small bowl, combine the almond flour with the remaining grated Parmesan. Sprinkle this mixture over the top to create the crust.

  9. 9

Bake for 25 to 27 minutes at 200 °C / 400 °F, until the bake is set and the top is golden.

  10. 10

Let it rest for 5 minutes before serving. Finish with the chopped fresh parsley on top and serve hot.

Chef tips

For a firmer texture, let the bake rest a few extra minutes before slicing. If you want a deeper golden top, broil for 1 to 2 minutes at the end, watching closely.

Substitutions

You can substitute the turkey with ground chicken. Cottage cheese can be swapped for drained ricotta, though the texture will be slightly softer. Almond flour can be replaced with ground oats, but in that case it would no longer be gluten-free and the allergens would change.
