Instructions
- 1
Place the grated potato in a clean kitchen towel and squeeze it well to remove excess liquid. Transfer it to a large bowl.
- 2
Heat a 24 cm skillet over medium heat. Add 1 tablespoon vegetable oil and cook the onion with the garlic for 5 to 6 minutes, until soft and lightly golden. Remove from the heat.
- 3
Add the cooked onion, rolled oats, beaten eggs, grated cheese, fresh parsley, sweet paprika, salt, and black pepper to the bowl with the potato. Mix well until you have a moist, even mixture.
- 4
Return the skillet to medium heat and add the remaining tablespoon of vegetable oil. Spread the mixture into the skillet and press it with a spatula to form a thick, compact round.
- 5
Cook covered for 10 to 12 minutes over medium-low heat, until the bottom is deeply golden and the mixture looks set around the edges.
- 6
Using a plate, carefully flip the cake. Slide it back into the skillet and cook for 8 to 10 minutes more, until the second side is golden and the center is fully cooked.
- 7
If you prefer to finish it in the oven, after flipping you can place an oven-safe skillet in a 392 °F / 200 °C oven for 5 minutes to ensure a firm center and more even finishing.
- 8
Let it rest for 3 minutes, cut into portions, and serve hot.
Chef tips
Squeezing the potato well helps prevent the cake from falling apart. If the mixture feels too wet, add 1 or 2 extra tablespoons of oats and let it rest for 5 minutes before cooking.
Substitutions
You can use red onion instead of white onion. Parsley can be replaced with cilantro or chives. Semi-hard cheese can be swapped for mozzarella or any budget-friendly melting cheese.
