Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Place the cauliflower florets on a baking tray with the whole head of garlic, top sliced off to expose the cloves. Drizzle with 15 ml (1 tbsp) olive oil and add half of the salt and some of the black pepper.
- 2
Roast the cauliflower and garlic for 25 minutes at 200 °C / 400 °F, or until the cauliflower is tender and lightly browned and the garlic is very soft.
- 3
While they roast, make the patties. In a large bowl, combine the lean ground beef, plain skyr, chopped fresh spinach, egg, almond flour, smoked paprika, ground cumin, lemon zest, the remaining salt, and the remaining black pepper.
- 4
Shape the mixture into 8 even patties. Sprinkle or gently press the sesame seeds onto both sides of each patty to create a light crust.
- 5
Heat a large oven-safe skillet with the remaining 15 ml (1 tbsp) olive oil over medium heat. Brown the patties for 2 to 3 minutes per side, until nicely colored.
- 6
Transfer the skillet to the oven and finish cooking for 8 to 10 minutes at 200 °C / 400 °F, until the patties are fully cooked.
- 7
For the mash, remove the roasted cauliflower from the oven and squeeze the roasted garlic cloves out of their skins. Blend the cauliflower with the roasted garlic until creamy. If preferred, mash with a fork for a more rustic texture.
- 8
In a small bowl, mix the plain Greek yogurt with the lemon juice and half of the chopped fresh parsley to make a quick sauce.
- 9
Serve a bed of roasted garlic cauliflower mash on each plate, top with 2 patties, and finish with the lemon yogurt sauce. Garnish with the remaining chopped fresh parsley.
Chef tips
If the patty mixture feels too wet, let it rest for 5 minutes so the almond flour can absorb some moisture. You can also brown them in batches to avoid dropping the skillet temperature.
Substitutions
You can substitute the skyr with thick plain Greek yogurt. Almond flour can be replaced with ground oats if you do not need a lower-carb option, though that may introduce gluten unless certified gluten-free oats are used. Parsley can be swapped for chives.
