Instructions

1. Preheat the oven to 220 °C / 425 °F. Arrange the eggplant slices on a baking sheet, brush with 2 tablespoons of the olive oil, and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon of the sweet paprika. Roast for 20 minutes, turning halfway through, until golden and tender.
- 2
2. Meanwhile, cook the potato in salted water for 15 to 18 minutes, until very tender. Drain and keep warm.
- 3
3. Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Sauté the onion and red bell pepper for 6 to 8 minutes until softened. Add the garlic and cook 1 minute more.
- 4
4. Add the ground beef and cook for 6 to 8 minutes, breaking it up with a spoon, until no longer pink. Stir in the cumin, oregano, the remaining 1 teaspoon sweet paprika, 1/2 teaspoon salt, and the remaining black pepper.
- 5
5. Add the tomato purée and red wine vinegar. Cook over medium-low heat for 8 to 10 minutes until the filling is moist but thick. Turn off the heat and stir in the fresh parsley.
- 6
6. Mash the hot potato together with the cooked chickpeas. Add the milk, butter, and a pinch of salt; mix into a rustic mash, not completely smooth.

7. Lower the oven temperature to 200 °C / 400 °F. In 4 individual baking dishes or one medium baking dish, layer the roasted eggplant, then the cumin beef, and top with the chickpea-potato mash. Finish with the grated cheese.
- 8
8. Bake for 15 to 18 minutes at 200 °C / 400 °F, until the cheese is melted. For extra color, broil for the final 2 to 3 minutes at 230 °C / 445 °F, watching carefully so it does not burn.

9. Let rest for 5 minutes before serving so the pie sets and is easier to portion.
Chef tips
For a smokier flavor, char the eggplant on a very hot griddle before roasting. If making ahead, assemble the pie, refrigerate it, and bake just before serving, adding 5 extra minutes.
Substitutions
You can replace the ground beef with ground chicken or with cooked lentils for a meatless version. Queso criollo can be swapped for mozzarella or firm cuartirolo. If you do not have red wine vinegar, use the same amount of lemon juice.
