Instructions

  1. 1

    1. Place the potatoes in a pot with enough water and 1/2 teaspoon of salt. Cook for 12 to 15 minutes, until tender but not falling apart. Drain well and roughly mash them in a large bowl.

  2. 2

    2. While the potatoes cook, heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the onion and cook for 6 to 8 minutes until soft and lightly golden. Add the garlic and cook 30 seconds more.

  3. 3

    3. Stir the peas into the skillet with the onion and garlic. Cook for 2 minutes, just until heated through or slightly softened if frozen. Remove from the heat.

  4. 4

    4. Add the onion, garlic, and pea mixture to the mashed potatoes. Add the all-purpose flour, beaten egg, grated cheese, 1 teaspoon sweet paprika, black pepper, dried oregano, and the remaining salt. Mix until you have a thick, even mixture.

  5. 5

    5. Heat the remaining tablespoon of vegetable oil in the same skillet over medium-low heat. Add the mixture and press it with a spatula to form an even round cake.

  6. 6

    6. Cook the cake for 8 to 10 minutes on the first side, shaking the skillet from time to time to prevent sticking, until the base is deeply golden. Flip it using a plate or flat lid and cook for 8 to 10 minutes on the other side until firm and crisp.

  7. 7

    7. If you prefer to finish it in the oven, transfer the oven-safe skillet or the cake to a tray and bake for 10 minutes at 200 °C / 400 °F after browning the first side.

  8. 8

    8. For the sauce, mix the plain yogurt, water, lemon juice, remaining 1/2 teaspoon sweet paprika, and chopped parsley in a bowl. Stir until smooth and lightly creamy.

  9. 9

    9. Serve the cake hot, cut into portions, with the creamy paprika sauce spooned over the top or on the side.

Chef tips

To keep the cake from breaking, let the bottom brown well before flipping. If the mixture feels too wet because of the potato type, add 1 extra tablespoon of flour. A 24 cm / 10-inch nonstick skillet also gives the best result.

Substitutions

You can swap the peas for corn or small cubes of cooked carrot. The yogurt can be replaced with sour cream or an unsweetened plant-based alternative, and the cheese with any affordable melting cheese you have on hand.
