Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Line a tray or plate with parchment paper.

  2. 2

In a large skillet, melt 1 tablespoon butter with 1 tablespoon oil over medium heat. Add half of the sliced onion and a pinch of salt. Cook for 12 to 15 minutes, stirring often, until deeply golden and caramelized. Add half of the minced garlic and cook for 30 seconds more.

  3. 3

Sprinkle the flour over the caramelized onion and cook for 1 minute, stirring. Gradually whisk in the chicken broth, then add the Worcestershire sauce and 1/4 teaspoon black pepper. Cook for 3 to 5 minutes until thickened. Keep the gravy on very low heat.

  4. 4

While the onion cooks, combine the ground turkey, Dijon mustard, smoked paprika, dried thyme, 1/2 teaspoon salt, 1/4 teaspoon black pepper, half of the chopped chives, and 2 tablespoons of the cooked caramelized onion from the skillet in a bowl. Mix just until combined.

  5. 5

Shape the mixture into 4 thick patties of equal size. Place the beaten egg on one plate and the crushed pretzels on another. Dip each patty first in the egg, then coat with pretzels, pressing lightly so they adhere.

  6. 6

Heat the remaining oil in an oven-safe skillet over medium heat. Brown the patties for 2 to 3 minutes per side. Transfer the skillet to the preheated oven and bake for 10 to 12 minutes, until the center reaches 74 °C / 165 °F.

  7. 7

Meanwhile, in another skillet, melt the remaining butter over medium heat. Add the remaining onion, red bell pepper, and the rest of the garlic. Cook for 4 minutes until softened.

  8. 8

Add the corn kernels and lima beans. Cook for 3 minutes, then stir in the milk, heavy cream, lime zest, 2 tablespoons lime juice, 1/2 teaspoon salt, and the remaining black pepper. Cook for 3 to 4 minutes, stirring, until creamy. Stir in the remaining chives.

  9. 9

Serve each turkey patty with a portion of creamy succotash and plenty of caramelized onion gravy spooned over the top or on the side.

  10. 10

If the gravy thickens too much before serving, add 1 to 2 tablespoons of hot water or hot broth and stir to loosen it.

Chef tips

Crush the pretzels into small crumbs rather than fine dust so the coating stays crispier. Do not overmix the turkey to keep the patties juicy.

Substitutions

You can use ground chicken instead of turkey. Lima beans may be replaced with edamame if soy is not a concern. For a milder flavor, swap the lime for lemon. If you do not have heavy cream, use extra milk and simmer a little longer to thicken.
