Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Place the sweet potato on a small baking tray, toss it with 1 tablespoon olive oil, a pinch of salt, and a pinch of pepper, and roast for 18 to 20 minutes until tender. Let it cool for 5 minutes, then lightly mash it.
- 2
While the sweet potato roasts, in a large bowl combine the ground turkey, roasted sweet potato, breadcrumbs, egg, half of the chopped onion, 1 garlic clove, 1 teaspoon smoked paprika, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix gently and form 8 even patties.
- 3
Heat 1 tablespoon olive oil in a large skillet over medium heat. Brown the patties for 3 to 4 minutes per side until deeply colored. Transfer them to a plate.
- 4
In a small bowl, stir together the maple syrup, apple cider vinegar, Worcestershire sauce, and the remaining 1 teaspoon smoked paprika.
- 5
Return the patties to the skillet, pour in the glaze, and cook for 2 minutes, turning to coat them well. For food safety, make sure the centers reach 74 °C / 165 °F if needed. Remove and keep warm.
- 6
In the same skillet, add the butter and the remaining 1 tablespoon olive oil. Add the remaining onion and remaining garlic, and cook for 2 to 3 minutes until softened.
- 7
Add the green cabbage, the remaining 1/4 teaspoon salt, and the remaining pepper. Cook for 4 to 5 minutes, stirring, until the cabbage softens slightly.
- 8
Stir in the heavy cream and Dijon mustard. Cook over low heat for 3 to 4 minutes until you have a light warm cream coating the cabbage without becoming too thick.
- 9
In a separate medium skillet, sauté the corn with 1 tablespoon of the skillet liquid from the patties for 3 to 4 minutes over medium heat until glossy and lightly golden. Add the scallions and cook 1 minute more.
- 10
Spoon the warm cabbage cream onto each plate, top with 2 turkey patties, and serve with the sautéed scallion corn. Spoon any remaining glaze over the top.
Chef tips
For the best texture, do not overmix the turkey. If the mixture feels too wet because of the sweet potato, add 1 to 2 extra tablespoons of breadcrumbs. The cabbage should be tender but still keep a bit of structure.
Substitutions
You can use ground chicken instead of turkey. The heavy cream can be replaced with half cream and half milk, though the sauce will be lighter. If you do not have maple syrup, use honey, but the flavor will be less classically American.
