Instructions

  1. 1

    1. Place the pearl barley and water in a medium pot. Bring to a boil, reduce the heat, and cook covered for 25 minutes, or until the barley is tender and most of the liquid has been absorbed. Drain if needed and let it cool for 10 minutes.

  2. 2

    2. Meanwhile, grate the carrot. Finely chop half of the onion and thinly slice the other half for the sauce. Also chop the garlic and parsley. Grate the semi-hard cheese and beat the eggs.

  3. 3

    3. In a large skillet, heat 1 tablespoon vegetable oil over medium heat. Add the finely chopped onion, half of the garlic, half of the sweet paprika, the ground cumin, and a pinch of salt. Cook for 4 to 5 minutes until the onion softens. Let cool for 5 minutes.

  4. 4

    4. In a large bowl, mix the cooked barley, grated carrot, onion mixture, grated cheese, beaten eggs, rolled oats, parsley, 1/2 teaspoon salt, and black pepper. Mix well and let rest for 5 minutes so the oats can absorb some moisture.

  5. 5

    5. Shape the mixture into 8 compact patties with your hands. If you prefer to bake them, preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.

  6. 6

    6. For skillet cooking, heat 1 tablespoon vegetable oil in the same skillet over medium heat and cook the patties for 4 to 5 minutes per side until golden and firm. Work in batches if needed, using the remaining oil little by little.

  7. 7

    7. For oven cooking, place the patties on the tray, brush them with a little vegetable oil, and bake at 200 °C / 400 °F for 18 to 20 minutes, turning halfway through so they brown evenly.

  8. 8

    8. For the warm sauce, place the sliced onion in a skillet with the remaining vegetable oil. Cook over medium heat for 6 to 8 minutes until soft and lightly golden. Add the remaining garlic, the rest of the sweet paprika, the lemon juice, and 2 tablespoons water. Cook 1 more minute and adjust with the remaining salt.

  9. 9

    9. Serve the patties hot with the warm onion lemon sauce spooned over the top or on the side.

  10. 10

    10. If you want to reheat them, warm them in the oven at 180 °C / 350 °F for 8 to 10 minutes to bring back the outer texture.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of oats. If it feels too dry, mix in 1 tablespoon of water before shaping. Browning them over medium heat helps keep them from breaking.

Substitutions

You can replace the barley with cooked rice or cooked wheat in a similar amount. The semi-hard cheese can be swapped for firm fresh cheese or shredded mozzarella. Parsley can be replaced with cilantro or chives.
