Instructions
- 1
1. Preheat the oven to 220°C / 425°F. Pat the turkey medallions dry with paper towels and season them with 1 teaspoon kosher salt, 1/2 teaspoon black pepper, the garlic powder, and smoked paprika.
- 2
2. In a bowl, combine the all-purpose flour, baking powder, baking soda, sugar, and 1/4 teaspoon salt. Add 4 tablespoons cold butter in small pieces and work it in with your fingers or a fork until coarse crumbs form. Stir in the shredded cheddar and 2 tablespoons chopped chives.
- 3
3. Pour the cold buttermilk into the biscuit mixture and stir just until a shaggy dough forms. Do not overmix.
- 4
4. Heat a 25 cm / 10-inch ovenproof skillet over medium heat and add 1/2 tablespoon vegetable oil. Drop portions of dough into the skillet to make 6 to 8 rustic biscuits. Cook for 2 minutes to set the bottoms, then transfer the skillet to the oven and bake for 12 to 15 minutes at 220°C / 425°F until golden.

5. While the biscuits bake, heat a large skillet over medium-high heat with 1 tablespoon vegetable oil. Sear the turkey for 3 to 4 minutes per side, until fully cooked and the internal temperature reaches 74°C / 165°F. Transfer to a plate and keep warm.
- 6
6. Reduce the heat to medium. In the same turkey skillet, add the bourbon and scrape up the browned bits. Add the molasses, 2 tablespoons butter, 1 tablespoon apple cider vinegar, and the red pepper flakes if using. Cook for 2 to 3 minutes until glossy. Return the turkey to the skillet and coat it with the glaze.

7. In another large skillet, heat 1/2 tablespoon vegetable oil and 1 tablespoon butter over medium heat. Add the yellow onion and cook for 3 minutes. Stir in the green cabbage, apple, Dijon mustard, the remaining 2 tablespoons apple cider vinegar, 1/2 teaspoon salt, and the remaining black pepper. Sauté for 5 to 7 minutes until the cabbage is tender but still slightly crisp.
- 8
8. Remove the biscuits from the oven and brush them with the remaining 1 tablespoon butter while hot. Sprinkle the remaining 1 tablespoon chives over the top.
- 9
9. Serve the bourbon-molasses glazed turkey medallions with the skillet biscuits and the warm apple cabbage slaw.
Chef tips
For taller biscuits, chill the dough for 10 minutes before baking. If you want a thicker glaze, reduce the sauce for 1 extra minute before returning the turkey to the skillet.
Substitutions
You can swap the turkey for chicken breast. The cheddar can be replaced with Monterey Jack, and the red apple with a green apple for a tarter profile. If you do not use bourbon, replace it with apple broth or juice plus 1 extra teaspoon apple cider vinegar.
