Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Even though the turkey is first seared in a skillet, this step helps finish the cooking evenly.

  2. 2

    2. Pat the turkey fillets dry with paper towels. Season them with 1/2 teaspoon salt, black pepper, and 2 teaspoons of the smoked paprika.

  3. 3

    3. In a small bowl, mix the Dijon mustard, honey, 1 tablespoon lemon juice, and 1 teaspoon olive oil until smooth to make the glaze.

  4. 4

    4. Heat an oven-safe skillet over medium-high heat with 1 tablespoon olive oil. Sear the turkey fillets for 2 minutes per side.

  5. 5

    5. Brush the turkey with the mustard, honey, and lemon glaze. Transfer the skillet to the oven and roast for 8 to 10 minutes at 220°C / 425°F, or until the turkey is cooked through. Remove and let rest for 5 minutes.

  6. 6

    6. While the turkey cooks, make the cream. In a small saucepan, heat the white beans with the chicken broth or water, 2 chopped garlic cloves, ground cumin, the remaining 1 teaspoon smoked paprika, lemon zest, and 1/4 teaspoon salt for 5 minutes over medium heat.

  7. 7

    7. Blend the hot white bean mixture with the Greek yogurt and 1 teaspoon olive oil until smooth and creamy. If needed, add a little more broth or water to loosen the texture.

  8. 8

    8. In another skillet, heat the final teaspoon of olive oil over medium heat. Add 1 sliced garlic clove and cook for 30 seconds. Add the fresh spinach, the remaining lemon juice, and a pinch of salt; sauté for 2 to 3 minutes until wilted.

  9. 9

    9. Spoon a layer of white bean cream onto each plate. Set a glazed turkey fillet on top and finish with the sautéed spinach. If desired, spoon the pan juices over everything for extra flavor.

Chef tips

For a silkier cream, blend the beans while still very hot. If the turkey fillets are quite thick, butterfly them slightly or pound them to an even thickness for more even cooking.

Substitutions

You can swap the Greek yogurt for plain skyr. The white beans can be replaced with cannellini or other cooked white beans. Honey can be replaced with a sugar-free syrup if you prefer a less sweet glaze.
