Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Season the turkey breast on both sides with 1 teaspoon salt, 1/2 teaspoon black pepper, and the smoked paprika.

  2. 2

Heat a large skillet over medium heat. Add the bacon and cook for 6 to 8 minutes until browned and crisp. Remove the bacon and reserve it, leaving the rendered fat in the pan.

  3. 3

Add the onion, celery, and garlic to the skillet with the bacon fat. Cook for 4 to 5 minutes until softened. Stir in the sage and cook 30 seconds more.

  4. 4

Transfer the mixture to a bowl. Add the crumbled cornbread, cooked bacon, 60 ml (1/4 cup) chicken broth, and the beaten egg. Mix until the filling is moist but not wet.

  5. 5

Open the butterflied turkey breast flat. Place the filling in the center and roll or fold the turkey over the filling. Tie with kitchen twine or secure with toothpicks.

  6. 6

In the same skillet, add the vegetable oil and brown the stuffed turkey breast for 2 to 3 minutes per side. Transfer the turkey to a baking dish or sheet pan.

  7. 7

    Roast for 28 to 35 minutes at 200 °C / 400 °F, or until the thickest part of the turkey reaches 74 °C / 165 °F. Rest for 10 minutes before slicing.

  8. 8

While the turkey roasts, make the gravy. In a small saucepan, melt 24 g (2 tbsp) butter over medium heat. Add the all-purpose flour and cook for 1 minute, stirring constantly.

  9. 9

Gradually pour in the remaining 120 ml (1/2 cup) chicken broth and the brewed coffee, whisking to prevent lumps. Add the Worcestershire sauce, 1/2 teaspoon salt, and the remaining black pepper. Cook for 3 to 5 minutes until slightly thickened.

  10. 10

For the green beans, melt the remaining 16 g (1 tbsp) butter in a skillet over medium-high heat. Add the green beans and sauté for 4 to 6 minutes until tender-crisp. Season with a pinch of salt and toss with the fresh parsley.

  11. 11

Remove the twine or toothpicks from the turkey breast, slice thickly, and serve with the mild coffee gravy spooned over the top and the green beans on the side.

Chef tips

If the cornbread is very dry, add 1 or 2 extra tablespoons of broth to the filling. Resting the turkey before slicing helps keep it juicy and prevents the filling from spilling out.

Substitutions

You can use a large chicken breast instead of turkey, adjusting roasting time until it reaches 74 °C / 165 °F. Sage can be replaced with fresh thyme. If you prefer a gravy without coffee, use more chicken broth instead.
