Instructions

  1. 1

If using wooden skewers, soak them in water for 20 minutes to keep them from burning on the grill.

  2. 2

In a large bowl, mix the honey, dry sherry, 2 tablespoons olive oil, garlic, smoked paprika, ground cumin, dried oregano, sherry vinegar, salt, and black pepper until a smooth marinade forms.

  3. 3

Add the pork loin to the bowl and toss well to coat every cube. Let it marinate for 15 minutes at a cool room temperature or under light refrigeration.

  4. 4

Preheat the grill to medium-high heat, about 425 °F / 220 °C. Lightly oil the grates with the remaining 1 tablespoon of olive oil.

  5. 5

Thread the skewers, alternating pork loin, strips of piquillo peppers, zucchini, and white onion until all ingredients are used.

  6. 6

Place the skewers on the hot grill and cook for 12 to 15 minutes, turning every 3 to 4 minutes so they brown evenly. The pork should be fully cooked and reach a minimum internal temperature of 145 °F / 63 °C.

  7. 7

During the last 2 minutes of cooking, brush the skewers with any reserved marinade that has not touched the raw pork, or set aside a small portion of the marinade from the beginning for glazing.

  8. 8

Remove the skewers from the grill, rest for 3 minutes, sprinkle with fresh parsley, and serve with lemon wedges for squeezing over the top.

Chef tips

For better browning, lightly pat the pork dry with paper towels after marinating and before threading. Do not overcrowd each skewer so the heat can circulate properly.

Substitutions

You can substitute pork loin with pork tenderloin. If piquillo peppers are unavailable, use well-drained roasted red peppers. Dry sherry can be replaced with broth plus an extra teaspoon of sherry vinegar, though the flavor will be less complex.
