Instructions

  1. 1

    1. In a bowl, mix the orange juice, orange zest, garlic, tomato paste, cocoa powder, ground cumin, dried oregano, 15 ml (1 tbsp) olive oil, 4 g (3/4 tsp) salt, and black pepper. Add the chicken thighs and coat well with the adobo. Let rest for 15 minutes in the refrigerator.

  2. 2

    2. Meanwhile, make the tortilla dough. In another bowl, combine the cooked mashed sweet potato, pre-cooked cornmeal, 4 g (1/2 tsp) salt, and the warm water little by little until you have a soft, workable dough. Divide into 8 portions, roll into balls, cover, and reserve.

  3. 3

    3. Heat a large skillet or wide pot over medium-high heat. Add the remaining 15 ml (1 tbsp) olive oil. Brown the chicken for 3 to 4 minutes per side. Remove the chicken and set aside on a plate.

  4. 4

    4. In the same skillet, add the white onion and sweet pepper or red bell pepper. Cook for 4 minutes, stirring, until softened. Add the chicken broth and scrape the bottom to release the browned bits.

  5. 5

    5. Return the chicken and all of its adobo to the skillet. Once gently simmering, reduce the heat to medium-low, cover partially, and cook for 18 to 20 minutes, until the chicken is tender and fully cooked. If you prefer to check with a thermometer, the center should reach 165°F / 74°C.

  6. 6

    6. For the salad, heat a skillet or griddle over high heat. Add the corn kernels and cook for 5 to 6 minutes, stirring only occasionally, until charred in spots. Transfer to a bowl and mix with the red onion, fresh cilantro, lime juice, and a pinch of salt.

  7. 7

    7. Shape the tortillas by placing each dough ball between two sheets of plastic or parchment and pressing into discs about 10 to 12 cm (4 to 5 inches) wide.

  8. 8

    8. Cook the sweet potato tortillas on a nonstick skillet or griddle over medium heat for 3 to 4 minutes per side, until cooked through, flexible, and marked with golden spots. Keep them covered in a clean towel to stay warm.

  9. 9

    9. Serve the adobo chicken with its sauce on a plate, alongside the soft sweet potato tortillas, and finish with the charred corn salad. Sprinkle the crumbled queso fresco over the salad before serving.

Chef tips

If the tortilla dough cracks, add an extra 15 ml (1 tbsp) of warm water. For deeper flavor, you can marinate the chicken for up to 2 hours in the refrigerator.

Substitutions

You can substitute the queso fresco with mild feta if preferred. Sweet pepper can be replaced with red bell pepper. If you do not have fresh oranges, use 100% natural unsweetened orange juice.
