Instructions
- 1
Preheat the oven to 220 °C / 425 °F. In a large bowl, mix 1 tablespoon smoked paprika, the garlic powder, onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 tablespoon olive oil. Coat the chicken thighs with this mixture.
- 2
Place the cherry tomatoes on a small baking tray and toss with the remaining 1 tablespoon olive oil, 1/2 tablespoon of the remaining smoked paprika, a pinch of salt, and a pinch of black pepper. Roast for 15 minutes at 220 °C / 425 °F, until burst and lightly caramelized.
- 3
Meanwhile, heat a large oven-safe skillet over medium-high heat. Brown the chicken thighs for 3 to 4 minutes per side. Transfer them to a plate; they do not need to be fully cooked yet.
- 4
Reduce to medium heat. In the same skillet, cook the yellow onion for 4 minutes in the rendered juices. Add the fresh garlic and cook for 30 seconds. Stir in the tomato paste and the remaining 1/2 tablespoon smoked paprika; cook for 1 minute, stirring.
- 5
Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits. Add the white beans and the roasted cherry tomatoes with all their juices. Simmer for 3 minutes. Add the baby spinach and stir until wilted. Taste and adjust with the remaining salt and black pepper as needed.
- 6
In a medium bowl, combine the all-purpose flour, baking powder, grated Parmesan, and chives. Add the melted butter and milk, and mix just until a thick batter forms.
- 7
Nestle the chicken thighs back over the bean mixture in the skillet. Using a spoon, drop 8 portions of dumpling batter around the chicken, without fully submerging them in the liquid.
- 8
Transfer the skillet to the oven and bake at 200 °C / 400 °F for 18 to 20 minutes, until the chicken reaches a safe internal temperature and the dumplings are puffed and golden on top.
- 9
Let rest for 5 minutes before serving so the sauce thickens slightly. Serve each portion with chicken, beans, roasted tomatoes, and 2 Parmesan dumplings.
- 10
For a deeper golden finish, place the skillet under the broiler for 1 to 2 minutes at 230 °C / 450 °F, watching closely so the dumplings do not burn.
Chef tips
For a thicker sauce, lightly mash a small portion of the white beans before returning the chicken to the skillet. Use a cast-iron skillet for better browning and heat retention.
Substitutions
You can substitute the thighs with large chunks of chicken breast, slightly reducing the cooking time. Parmesan can be replaced with pecorino, and white beans with cannellini or navy beans. If preferred, swap chives for fresh parsley.
