Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Slice the top off the head of garlic, place it on a small piece of foil, drizzle with a little olive oil, wrap it, and set aside.

  2. 2

In a large baking dish, toss the cherry tomatoes and shallot with 1 tablespoon olive oil, the balsamic vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Place the wrapped garlic head in one corner of the dish.

  3. 3

Pat the chicken thighs dry with paper towels. Season them on both sides with the remaining salt and black pepper.

  4. 4

Roast the tomatoes, shallot, and garlic for 15 minutes at 220 °C / 425 °F.

  5. 5

Meanwhile, make the crust. Squeeze the roasted garlic cloves into a bowl. Add the grated Parmesan, breadcrumbs, parsley, thyme, lemon zest, melted butter, and 1 tablespoon olive oil. Mix until the texture is moist and sandy.

  6. 6

Remove the baking dish from the oven. Gently stir the tomatoes and shallot. Arrange the chicken thighs over the tomato bed, skin side up.

  7. 7

Mix the lemon juice with the Dijon mustard and brush it over the top of each thigh. Divide the garlic-Parmesan herb crust on top, pressing gently so it adheres.

  8. 8

Lower the oven temperature to 200 °C / 400 °F. Bake for 25 more minutes, or until the chicken is cooked through and the crust is golden. For extra color, broil for 2 to 3 minutes, watching closely, at 230 °C / 445 °F.

  9. 9

Let the chicken rest for 5 minutes out of the oven. Serve each portion with the slow-roasted tomatoes, roasted shallot, and pan juices spooned over the top.

Chef tips

For a crispier crust, use panko breadcrumbs. If the tomatoes release a lot of juice, stir them before adding the chicken so the flavor concentrates better.

Substitutions

You can substitute shallot with red onion. Thyme can be replaced with fresh oregano. For a gluten-free version, use gluten-free breadcrumbs.
